Greek-style doughnuts
Makes 3-4 dozen
1 cup Warm water
2 teaspoons Yeast
1/2 teaspoon Sugar
2 1/4 cups Flour
1/2 teaspoon salt
1 teaspoon Cinnamon
1/2 cup Honey
1/2 cup Water
Oil for frying
Add the yeast to the warm water. Set aside for 5 minutes.
In a separate bowl, sift together the sugar, flour, salt,
and cinnamon. Add the yeast mixture to the dry ingredients
and mix well. Cover and set in a warm place for 2 hours.
Stir the water and honey together in a saucepan over low
heat until just warm. Set aside. Pre-heat about 2 inches of
oil to 325. Carefully drop tablespoons of the batter into
the oil. Fry, turning often, until lightly browned. Drain
briefly on paper towels. Toss in the honey mixture.
Sprinkle with cinnamon. Serve immediately.
