Roasted Tomatillo Salsa
3/4lb tomatillos(save one aside)
1/4lb small onions
2+ chiles(to taste-Anaheim or Pablano work best)
1/2c cilantro
2-4tsp lime juice(to taste)
salt(to taste)
DO NOT peel onions-place onions, chile & tomatillos (remove husk & rinse) in a 10-12" cast iron skillet on high heat(this will discolor any other pan) char about 15 minutes. let 'em cool. peel skin from onions-put tomatillos, chiles, minced uncooked tomatillo, onion & cilantro in food processor(or chop by hand if a mascochist). Season with lime & salt
