Cream cheese adds richness to the humble mashed potato.
Serves 4
4 large Potatoes, peeled and quartered
2 Tablespoons Butter
1/2 cup Milk
4 ounces Cream cheese, softened
1 Tablespoon Chives, snipped
1 1/2 Tablespoons Parsley, chopped
Salt and pepper to taste
Boil the potatoes until soft. Drain, and add the rest of
the ingredients. Mash to the desired consistency. Check the
seasonings. Serve warm.
